2009 Dueling Chef Competition

Liliana's Sous Chef Dan Smith (right), assisted by chef Scott Peterson (left),
are won the Dueling Chef Competition in the Madison Food and Wine Show 2009.
Chefs from seven of Madison's finest restaurants battled it out. In each round,
chefs made two dishes containing a mystery ingredient that wasn't revealed until
moments before the heat began.
Each chef cooked with his / her own sous
chef, and had 30 minutes to come up with the menu and create two dishes
featuring the mystery ingredient.
In the first round against Captain
Bill's, the mystery ingredient was two fresh whole fish: a pompano and a
flounder. In the second round against Dardanelle's, the mystery ingredient was a
duck and duck eggs.
In the final round against Restaurant Muromoto, the
mystery ingredient was live lobster.
We'll be celebrating the
creativity and skill of our winning team with a special Tuesday
Chef's Menu this week, where they will recreate some of their winning
dishes. Because this week will be a special 4-course meal rather than the usual
3-course, it will be $40, with the wine flight an additional $15. If you want
to have a chance to taste these wonderful dishes, please make sure to make a
reservation
early and state that you want the special 4-course meal, and we'll make sure we
prepare enough for you.
On Saturday, October 24, they won their first two matches, and won the final
round on Sunday.
